Our Story
Foret Distilling was founded in Castlemaine in 2021 on a warm night of summer. Celebrating his housewarming party, Charles complained to Nathan about the lack of good Pastis in Australia. A drink of choice for the hot and dry summer, something Central Victoria knows all too well.
While the night went on, both looked at the small garden shed and what sounded like a joke quickly became a much bigger project. “Hey, how hard is it to start a distillery?”
Of course the question didn’t fall off deaf ears; Nathan is an experienced distiller having worked with Gin, Whiskey and Brandy for years.
Pastis
As the most consumed spirit beverage in France, Pastis is the companion of every Bistrot in France, from Paris to Marseille, Biarritz to La Clusaz. Its distinct notes of anise, fennel and the many botanicals found in the South of France make Pastis unique in its kind.
Foret Pastis pays tribute to both the French savoir-faire mixed with an Australian touch, using some native botanicals with the traditional recipe.
Forêt
Pronounced for-eh, Forêt means Forest in French and pays tribute to the creek that made the fame of Castlemaine.
We are a proud independent distillery, making small scale spirits and partnering with local producers. We pride ourselves in championing our local environment. While we have big dreams, we also are proud of our humble beginnings in a tiny shed.
The Team
Nathan is a well seasoned distiller with experience in gin, whiskey and brandy making in both England and Australia. With an engineering background, he is a specialist in all the magic of making fantastic spirits.
Charles-Andre - or just Charles - is a Pastis aficionado. Having built a solid experience in hospitality in Paris and kept connections with the food world whilst working in the visual arts industry, Foret is the rekindling of a passion for flavours and quality spirits.
Niama is a visual artist, designer and spirits specialist. She designed the iconic label and hand drew the unique font for Foret, and is in charge of all visuals. She has extensive experience in visual design and branding.
