Forêt Pastis, a sophisticated yet refreshingly light apéritif distilled in Castlemaine.

Inspired by the French Riviera, sunsets and the sound of the cicadas, our Pastis is a blend of traditional knowledge combined with locally grown botanicals, giving this sweet aniseed aperitif a uniquely Australian character. 

What is Pastis?

If you’ve never heard of it you’re not alone. Enjoyed on Paris sidewalks, summer afternoons playing Pétanque or accompanying a long lunch. It is the most popular spirit in France, but little known in Australia. 

How to serve

Classic

Mixing Pastis is a ritual to savour. Traditionally 30ml is served neat, with water and ice on the side to be added to taste. (we love it with ice and 90ml water)

Forêt and soda

For a more contemporary drink, pour 30ml over ice, top with soda and a sprig of fresh herb (try mint, rosemary or tarragon).

Forêt Sour

45ml Forêt Pastis
15ml amaretto
30ml lemon juice
Egg white or Aquafaba

Fill shaker with ice and ingredients. Shake VERY well. Strain and serve into chilled cocktail glass.
